Dedes Waterfront Group is kicking off a new era of event experiences with the launch of Suite Two, an exclusive penthouse venue on Jones Bay Wharf featuring a menu shaped by Head Chef Danny Russo. The multi-million-dollar venue joins Dedes’ portfolio alongside Sala Dining, Alpha Dining, Flying Fish and Deckhouse.
Russo, who owns the Russolini Group and has worked across leading restaurants in Europe, Asia and Australia. He brings classical training and decades of experience to the project.
Known for his perceptive eye on dining trends and influences, his menus for Suite Two range from canapés and set courses to live gourmet stations, each built with detail and theatre in mind.
On the drinks front, Sommelier Stefano Satta is curating a tailored beverage program, including a premium whiskey collection designed to complement the space and Russo’s menus.
Suite Two’s interiors blend bespoke furnishings and layered lighting with an art collection valued at more than $250,000, featuring contemporary Australian and international works.
Flexible layouts cater for 40 seated guests on the ground floor, 60 upstairs or 90 for cocktail-style events, all with sweeping views of the Harbour Bridge and direct pier access for yachts.
“Guests are looking for venues that are not only exclusive but memorable,” said Con Dedes, owner of Dedes Waterfront Group. “Hosts appreciate intimacy, design and detail. No two events are weaved the same.”
Suite Two also arrives at a time when event formats are shifting. Immersive, chef-led dining and theatrical cocktails are trending for Christmas parties, Melbourne Cup is moving from large-scale lunches to more intimate private viewings and Weddings are becoming increasingly boutique, with couples choosing mid-week dates and favouring exclusivity and detail over scale.
Opening in October, the venue cements Dedes Waterfront Group’s place in Sydney’s evolving event scene, with Russo’s expertise anchoring the experience.
