
Marrickville restaurant 20 Chapel is taking over the kitchen at Philter Brewing for a one-day collaboration on March 8, bringing its signatures and exclusive snack packs to the brewery floor.
Dubbed Philthy Chapel, the takeover is led by 20 Chapel co-founder and Head Chef Corey Costelloe, whose career spans Catalina, Flying Fish and Rockpool Bar & Grill.
The restaurant has quickly built a reputation as one of Australia’s top steak destinations since opening in 2024, earning a chef’s hat in the Sydney Morning Herald Good Food Guide and landing at number 13 on the Best Steak Restaurants in Australia 2026 list and number 93 on the World’s 101 Best Steak Restaurants.
Snack Packs and Signatures
The event centres on the 20 Chapel Snack Packs, a brewery-ready format built around the restaurant’s cult wagyu-fat wedges, layered with premium beef, fries and housemade sauces and designed for sharing over beers.
The full snack pack menu consists of:
Wagyu fat wedges with Blackmore Wagyu, CopperTree Farms crème fraiche and housemade chilli jam
Fries with Blackmore Wagyu, housemade jalapeño hot sauce and Korean BBQ sauce
Alongside the snack packs, a selection of 20 Chapel signatures will be on offer, including BBQ octopus with romesco, leek and hazelnut alongside grilled Mooloolaba prawn skewers with white pepper and garlic chives. Also on offer are the Tom Yum tomatoes, Sichuan duck leg with smashed cucumber and black vinegar and the Fijian kokoda with sweet potato, coconut and sago served in a coconut shell.
Guests ordering the kokoda can add a shot of rum poured straight into the emptied coconut shell once the dish is done.
Behind the bar, Philter beers will be matched to the menu alongside signature cocktails. The event is designed to run from lunch into the afternoon, with DJs spinning 90s hip-hop throughout.
