
The General Assembly on South Wharf has launched a new menu led by Head Chef Jin Choi, bringing a fresh take on Australian pub classics with light touches of Southeast Asian flavour.
The update arrives just in time for spring, with Choi drawing on his fine dining background and Korean heritage to put a refined edge on familiar favourites.
The new menu
Boasting kimchi mayo-topped loaded hot chips and house-made beef dim sims in chilli vinegar and soy, as well as staples like parmas and steak sangas, the new menu balances nostalgia with subtle spice.
“Our menu is mostly classic pub food, but I like to borrow from and honour my heritage by adding a bit of Korean flavour and inspiration to some dishes – from our potato cakes with chilli jam and cauliflower bites with a Korean chilli vegan mayo, to cured Hiramasa Kingfish with perilla leaf dressing,” says Choi.
“I also love the pan-fried Snapper fillet, where I use Korean chilli powder to balance the flavours. I’ve tried many varieties of chilli flakes, but I find Korean chilli gives the best mix of flavour and heat – not too strong and totally tasty.”
Diners can pair their meal with the venue’s Victorian Beer Flight, which showcases both well-known and smaller brewers from across the state.
The kitchen also features a Josper grill, which Choi uses to bring gentle smoke and depth to meats and vegetables across the menu.
Classic training, personal influence
Choi joined The General Assembly in 2022 after working with some of Melbourne’s most respected venues including Coda, Spice Temple, Cutler & Co and Lollo at W Melbourne.
“I’ve always been passionate about growing and evolving as a chef. It’s a privilege to share my skills and experience with both the team and the customers at The General Assembly.”
Located a short walk from DFO, Melbourne Convention & Exhibition Centre and Polly Woodside, The General Assembly sits on the Yarra River in one of the city’s busiest precincts.
The updated menu is now available, offering a contemporary take on pub food that reflects Choi’s mix of classic training and personal influence.
